In most parts of Mexico,if you ask for "muy muy picante" they will bring you a plate of a green habanero sauce, almost like a puree. Remember the Simpsons episode where Homer eats the insanity pepper that causes him to meet a coyote voiced by Johnny Cash?? Well that is what this stuff did to me. I cant even remember walking back to our hotel on a few occasions I was that buzzed.

I use green peppers in the jar for the juice to dribble over black eyed peas or greens.





MARZ my friend...... You have a little east coast Southern boy in you??? I'm surprised any west coaster know about greens and black eyed peas! Two of my favorites.....

When I was in my late twenties 3 of my friends and I formed the "Wing eaters Hall of Fame"..... that's what we officially called ourselves.

Each week we would rotate to another members' house and it was that members' job to make the wings and supply the beer. Every week the wings got hotter and hotter. We would sit by a picnic table at eat the hottest freakin' wings you can imagine. The sweat would be rolling down our faces and we would be laughing  and drinking beer like crazy. We did this for an entire Spring/Summer.

I used to make my own sauce.... known as "Thermo nuclear Meltdown". The boys always had a little trouble with that sauce. :*))

We did it on Wednesday evenings and my 40 mile to trip the next morning was always "uncomfortable".  :XX     But man was it worth it.

Speaking of Habaneros, I like a sauce called "Pain Is Good". It is made with Habaneros and it helps me to remember that if I ain't sweatin' I ain't really eatin'! The sauce comes in a pint flask like they sell cheap vodka in and has a picture of a Jamaican guy on the label screaming his lungs out.

Living in New Mexico, we put red or green chile or jalapenos on everything.

It really depends on the location they are grown in. The best place in NM for chili is Hatch, bottom line. Red or green. The red is usually spicier, the green has better flavor in my opinion.

My dad is from 'Bama (along with a whole bunch of my family). I am from Oakland originally so between 70's soul food and having a dad from the south... I eat all that stuff, Fried ocra, greens black eyed peas, cornbread, hush puppies, and fried chicken better be done right .... no KFC B.S.

Man that makes my mouth water! When I was on my golf trip to Myrtle beach last month, i had to go right past Fayettville, NC on 95 South. Well my favorite soul food restaurant is in fayettville so I go t off the Interstate and took my buddy there to eat. What a way to start my trip..... it was an awesome meal!!!! MMMM!!!! had all the great things you just mentioned but most importantly there was also Eastern Carolina pork barbecue! Man if yoou've never had that you haven't lived!!!!!

I have only been to the South once, to New Orleans. I ate there like I have never ate in my life. What a gluttonous culinary orgy that place is... and I am not even counting the drinking.

I (and the wife) are planning to go back to the south very soon to try different regions food.

I am guessin you are a fan of biscuits and gravy with chicken fried steak and grits? Or Pork Chops and hominy?...

Oh you Southerners can cook for Marz anytime!
