I'll disagree, Slynito. The actual optimal temperature for the water differs across different brewing methods.For a French press, for example, 200ºF is best. Any hotter, and undesirable bitter components of the beans are leeched out into the brew.

I made coffee all over the high country of CO and seldom could get something that tasted decent...the water never got hot enough. I had to use extra grounds and boil them for much longer. Gotta put some fire under that water, I'mma sayin'!
Loved using the French Press for years with fresh ground beans, great invention. But lately I've pulled out the old percolator from my camping gear and make it like Daddy used to. Makes the whole house smell like breakfast time.
