I am a long time Star Trek fan and I loved the new movie.
My wife and went to see it tonight (Saturday). I've always been a Trek fan and I may be opening a can of worms here BUT:
I found it rather boring. Same plot line as when Picard battled the Borg. The only real difference was HOW the crew got together to start with. Other than that, pretty much the same ole same ole. I mean, it's not like you didn't know who lived or anything. They have been cruising the galaxy since the 1960's. LOL
It did have have some good graphic effects, I will give it that. Wife really enjoyed it. I kind of dozed off I think. How did Kirk get to Antartica anyway?
To each. Most people enjoyed it, some didn't. A few friends of mine detested it (but for different reasons).
WARNING! The following contains plot spoilers. Do not read if you don;t want to know what happens!
But to address your points:

Don't see it. No assimilation. No attempt at invasion. Just a good old revenge plot-line. More in common with Wrath of Khan in that respect.

Because of the reset in the time line, anything was up for grabs. The destruction of Vulcan changes the whole Star Trek universe immensely. Anything can happen going forward because the Star Trek we all grew up with no longer happens! Clever way to get a clean slate, JJ.

Thats was a moon of Vulcan on which (young) Spock stranded Kirk because he was getting snippy.

I think is was great!! Well done and captured the essence of the original Star Trek series, but with an edge... Of all the ST movies that I've seen, hands down the best!
The only thing I didn't really care for was the whole Spock-Uhura thing, but it did follow the "change" to the ST universe theme...

I agree. There were a number of small things that I thought could have been done better, but the Spock/Uhura thing was the only big one that I thought really stuck out as unlikely.
