Whe have here in the Netherlands an very old tradition  on old years eve we eat oil balls (see the pic)
We live here with 17.000.000 people butt this eve 17.000.000 oil balls.

I was thinking, I am never going to the Netherlands for New Years when I read "oil balls" but then I saw the pic and they look yummy!!

In the U.S. the traditions are such:

If you are not single:

Count down with 10 seconds left
Drink Champagne
Kiss the person your husband/wife/significant other.

If you are single:

You go to the best party you can get invited to,
spend most of the night trying to find the person you want to kiss
drink enought to ask them to kiss you or just plant one on them
position yourself next to the person you hope to kiss
count down
drink a lot of champgane
try to kiss them.

You forgot to include the traditions of singing of Auld Lang Syne and trying to get a bit more than a kiss!

When I was single, I couldn't remember the words to Auld Lang Syne. Too much to drink before 12:00...hehehehehehehehe

In the UK a traditional New Years Eve is as follows:

Early December - Come up with a plan that seems a good idea at the time
New Years Eve - 7pm meet friends, enter extremely overpriced pub that you have to pay to get into and pay more for drinks, cant sit down, breathe, move or get to the bar
8pm - think that this is hard work and start buying two or 3 drinks at a time
11:59 - drunkenly sing auld lang syne
02:00 - pay 3 times as much for a cab
02:30 - fall asleep with your head on the rim of the toilet

Me on the other hand have a pregnant partner so stayed in and watched Amelie, some bizarre French film, although it is very good if you havent seen it

Also, in the south, eating black eye peas on New Years day is supposed to bring money.  Collard greens and Ham are custom dishes, but I don't remember why.

actually black eyed peas brings luck and cabbage brings money. always eat it and never had either.

Either way, I enjoy both, but the wife doesn't, guess I should learn how to cook them myself.
