I usually fry it, but this year it's just us, so going to smoke a large turkey breast.

WTF??Fried Turkey? You must be kidding me..This is the first I've ever heard of this being done on Thanksgiving. I love fried food just as much as the next guy but frying a Thanksgiving turkey sounds very bizarre.

The oil is so hot that it seals all the juices inside the meat. I can fry an 18lb bird in 55 minutes and it will be sweet, tender, and juicy. Not dry. But you need a frying set up and a place away from anything that can burn.
