My head is flakey / dry!!

Could be the shave gel that you're using that's causing the problem. Try switching to a shave soap, most likely that'll solve your problem.

I have a dry head/dandruff problem too even though my skin is oily (or perhaps more correctly said "BECAUSE my head is oily!").  I do find that shaving with a buzzer is crazy bad for my head.  So I try to keep using my razor every 2-3 days to avoid the hair getting so long that it's hard to shave without cutting myself with the blade and requires a buzzer.

I have the same problem and following helps me:
Shave with a blade; no clippers or electric face shaver. These things seem the pull up and loosen skin cells or flakes. The blade seem to just take off that top layer of dead skin cells.
Head Lube Matte works for me. Using any moisturizer is best done with damp skin, imho.
I also keep humidifiers running in my home and keep an atomizing humidifier by my bed at night.

I make a very mild exfoliating paste of 1 part baking soda to 4 parts olive oil.  Cheap (free) and works like a champ.
