Me and the Fiance' are trying to lose weight for the wedding and this was a modification of a family favorite that turned out really freaking good.....give it a try its a favorite with both of us and our daughter:
Casey’s Healthy
Guiltless Taco Casserole
Ingredients:
Baked Nacho Cheese Doritoes
2 Cups of 2% shredded Mexican blend cheese
1 lb of lean ground beef (go for the 95/5 or 90/10)
1 Large can of fat free refried beans
I jar of medium salsa
I can of chopped green chilis
1 packet of taco seasoning
Brown the meat and prepare as directed by taco seasoning packet. Set aside and let cool.
Heat the beans and add a little water to make them easier to spread.
In a deep 8x11 inch pan spread a thin layer of beans across the bottom of the pan.
Add a layer of chips
Add a layer of taco meat
Add a layer of beans
Add a THIN layer of salsa
Sprinkle with cheese
Repeat until all that’s left is some doritoes
Spread those across the top layer and sprinkle with cheese.
Bake for 40 minutes at 375 degrees or until heated through
Broil on high heat for 3-5 minutes or until top browns just a bit.
Allow to sit for 15 minutes to harden before serving.
Serve with fat free sour cream, hot sauce or extra salsa.

I have one that is my mom's recipe but it is loaded down with the "bad" stuff. Might have to give this one a try. O0
