I'm a huge fan of BBQ Tri-tip. I don't think many of you outside of CA actually see this cut. It's similar to brisket, but with a little more fat so it's a bit more juicy.

hell yeah tyler. brisket is my favorite, but i love to grill anything. Â fish is awesome. but i prefer brisket or venison.

that is funny rob. when i lived in Co. we had "stand up bbq" everyone would stand around and sample everything as it would finish. snow or not.

I've had Kruez's bbq (San Marcos) and Louie Mueller's (Taylor Texas) in Texas and they were both awesome. I thought Mueller's was the best. Mueller's kin also opened a store in Austin, John Mueller's. This was very good as well if you don't want to travel out to the sticks. It was near the UT campus somewhere.

Everett Jones BBQ (Oakland, CA)....outstanding.
By the way, here's a great beer marinade recipe (easy & tasty):
one 12 oz beer (believe it or not, Coors/Bud works great)
4 and 1/2 Tbsp dried chopped parsley
1/3 cup soy sauce
3 garlic cloves, minced
Mix it all in a bowl and let the meat marinade in it, preferably overnight. One meat that works well with this is a pork tenderloin. I'll get some pork, cube it, and do an overnight marinade. I put the pork on skewers and BBQ it. Awesome.
One other marinade that works great with chicken is italian salad dressing. It actually helps keep it moist on the grill (chicken dries out too easily) and helps prevent it from getting too blackened.
Oh, and the #1 rule Schro has for Q-ing....keep the chef well lubricated! ;D

I have had many steaks in many locations, but my favorite is the NY Strip from the Chop House in Chicago, medium rare. Have one for me BaldRob.

As much as I love going out to dinner, I usually go out to restaurants that serve food that I don't / won't prepare at home. Hence, I usually don't order steak when I go out (Chop House in Chi-town is outstanding by the way, last summer went to Chi for business). At a steak house, I'll usually order rack of lamb. Typically, we go out for Japanese, Mexican, or the restaurant at our home golf course (bartenders treat us well ;D).
I've always found that my wife (and when she was my girlfriend pre-1995) always appreciated it more when I took the time to prepare the dinner rather than go out. Effort was much more rewarded when you cook rather than pay, at least for me.

Wife bought me a Masterbuilt Smoker for Christmas (of course, the cost of it shows up on my VISA bill....women). I have commented several times on my bro-in-law's smoker and the taste of the meat that it produces. Anyway, I have used it 3X since Christmas. It is awesome! We've done chicken and salmon. LOVE IT.
Oh, I DID SHAVE THE HEAD for New Year's. It is a wierd feeling, very different. Anyway, wife's reaction is not all that good, but she is supportive of what I want to do. I'll post the picture of my new look in a different link once I have a chance to get the digital camera out.

Thanks. I spent some time in the sun yesterday and the discoloration has gone down a little. It's still an interesting feeling. It'll take some getting used to. I plan to stick it out. I have a lot of social functions coming, so it'll be fun to gauge the reactions. I'll probably be shaving it every two or three days.

Thanks, it's a look that's growing on me. By the way, I used the Headblade and the Headslick (which rocks!), and the Matte finish headlube.

So, back on track to BBQ...
I went to a new place here in the burbs tonight called "The Full Slab". It was pretty good... nice selection of BBQ sauces. The ribs were just OK though. If they were rubbed ahead of time, I don't know... but it didn't taste like it. And as anyone who BBQs ribs knows, using a good rub can turn an ordinary rib into a GREAT rib.

When I was in Memphis a while back, I did the only three things one can do while there. (1) Tour Graceland - which is the ultimate in bad taste (2) see the ducks at the Peabody Hotel and (3) eat at a famous mecca of barbecue, the Rendevouz. The ribs are very good, and the atmosphere is great. It's a Memphis Landmark.

There's a place here in town that a buddy and I used to go to religiously. It's called Rudy's Country Store and BBQ. Good stuff, we'd go every friday night and polish off half a pound of brisket each plus sides. They'd also give us almost a full loaf of bread so we could make sandwiches if we wanted to. Good eatins

Damn this thread is making me hungry,lol. It's been too long since I've been to a good bbq or even ate bbq for that matter. I'll be getting a new place here in a couple weeks so I guess I'll break the place in with some beers and some grillin!

Interesting how the concept of barbecue changes depending on locale. In the south, barbecue is a noun - a type of food made from chopped pork or beef and slathered with a spicy tomato (or in NC and the low country, mustard) based sauce. Artery clogging potential determines just how good it is! See that for a lot of you the concept of barbecue is what we call "grilling".

actually mr. pruitt we probably have the same concept of bbq/grilling. i just did not feel like starting a new topic about "grilling". besides, if it is cooked on a pit it is better anyway. no matter what you call it. O0 8)

My mom and I are splittin almost half a hog from my boss' brother. Ended up with 90 pounds between the two of us, and we got a little bit of everything. MMMMMMMMMM......good eatin )-m

being a meat cutter, i've never heard of Tri-tip.... i'm going to research it... as for prisket are you guys on crack it's so bloody tough, brisket is good when pickled or corned and boiled and somone has corned beef and brisket
Ok did a search on Tri-tip in canada we call it sirloin tip.
you americans are weird you like your BBQ beef, which is great however you like the tough as nails steaks... What's up with that...
I love cooking on the BBQ, and when i'm Qin I get either Top Sirloin, T-Bone, and Prime Rib steaks..... seriously guys, i'm shocked and appauled to find out you are eating the tough stuff what's up with the seriously???

If cooked right, beef doesn't come out tough at all from the grill. In fact, Team Schro prefers beef from the grill.

I don't know anyone who actually LIKES a tough steak.
I'm not a veteran BBQ'er, but it's my understanding that when you cook at a lower temp for a longer time = Tough
I cook at the highest setting for a short time, keeping it pink on the inside and it sears in the juices = Tender
Recently when my propane was running out, I couldn't get the temp up....cooked chicken for a longer time at a low temp......was like chewin' on a saddle, man.

Tri-tip is not very tough at all. That's why it's so popular here. BBQ it up medium or medium rare and you're good to go!

Brisket is from the chest, a very worked muscle the more work a muscle the tougher the meat, the connective tissue are stronger, other steaks have connective tissues that will melt with heat such as Prime Rib and T-Bone.

While Chicago is known for its steaks and ribs, none better for me than the spareribs my grandmother and mother make. Rich, thick sauce is from scratch, ribs browned off and then baked in the oven. So tender they fall off the bone. Mmmmmmmmmmmmmmmm good.

Is he really a "Chefs" fan???? Sorry, I couldn't resist. A few years ago there was a Chiefs commercial where the guy had spent all day painting "Chefs" on the endzone and didn't realize it till he had finished. It was a funny commercial and you just reminded me of it. :D

to get back on topic, had me a BBQ tonight after work...
Cooked up some baked potatoes, which i cooked on the Q
Corn on the cob which i'm use to having boiled but this time my buddy recommended to cook it on the Q so i did and that was some good stuff.
and I had a nice thick T-Bone Steak cooked to well done.
someone should share a brisket recipie with me so i cna try this "amazing peice of meat".

I am going to be firing up the bbq tomorrow and throwing some meat on it. Prob a few sirloin steaks and some sausages. It will be the first one for about 5 months.

Heck No! Even here in the states you will find me out on a cold wintery day firing up the ol grill. I like doing it in Janauary ...4 feet of snow on the ground...middle of a blizzard....pull the grill just up to the back door..fire that baby up...slap on the food and bbq....neighbors...you can all see them standing in their windows...mouths drooling...and their lips moving to the words sorta like...That Idiot!...lol But hey...who is gonna be eating good tonight? ehhh..yea...lol ME!

It has been such a long time between grills because unfortunatley I didnt properley take care of my grill hotplates and they have become rusty and ruined so I just bough new ones. With the new baby and all I didnt have time to replace them but in a few hours,she will be hot and heavy again.! O0

Looking for a good homemade bbq sauce recipe. I must say right now ..commerical brand that i find fairly tastey right now is the Hunts Brown sugar honey flavor. I like a good sweet ..not too spicy ( as in hot) sauce.
Any good ones out there..send em my way.
