My name is Ryan. I am 17, and am going to school to become a Chef. My future plans are, one, to become a Chef, and two, someday open my own restaurant. I love to cook, and create new recipes, also, making changes to old classics. I am in the process of making my own cookbook, although I have not got a lot started on it yet, but hopefully, I can finish it, and maybe publish it in the near future.

Welcome Ryan! Another chef - awesome. I too am currently pursuing my dream of being a chef and hope to open my own restaurant sometime in the future. Which school are you attending? I'm going to Sullivan U. in Louisville KY - Emeril is on their board of directors... sweet huh? Are you focusing on culinary or baking/pastry? Glad to meet another future chef - maybe we'll both be Iron Chefs eventually O0

Well, I am focusing on both, cullinairy and baking. I am still in high school. I have recieved my best grades in all my cooking classes. I am planning on attending Liason College, in Totonto, but, I have applied for a program at my school, which is called OYAP, where I will be attending another High School, training with Flemming College. I stay at that High School for 3 days of the week, then I pick a restaurant of my choice to aply to, and I work there that last 2 days of each week. After I finish the course, I get to stay at that restaurant to start Apprentaceship.

Still have a lot of learning to do though. I did a school program at a sports bar, and now work there as a prep cook. Although, there has been talk of me being able to train as a line cook this summer. Next year I am trying to do a school program at somewhere fancier than a sports bar, go get better experience, so I am looking forward to this.

I will be training with Flemming College during the last half of my grade 12 year (Next year), and will recieve a certificate (If I pass the course) for 1 year of Apprentaceship completion. Wish me luck :)!!!!!

Thanks for the comments people. Thanks for the encouragement.

O0 Welcome, Ryan. Glad you're on board and pursuing your professional aspirations. Here's a suggestion: write a cookbook for men. Most cookbooks are written for women, who know their way about the kitchen and cooking nomenclature; most guys don't, so a cook for guys would sell. There has been only one so far and it's out of print, Mike McGrady's Husband's Cookbook. My copy is virtually in shreds from use. It's time for a new book from the same angle. All best, Professor Melon
