You could test it in your gas grill, just need another grate, to set above the burners, that you can put the charcoal on. Would be between the burners and the grill part you cook on.
Are you using that plank with propane Tyler? Have always wanted to try cedar, we use maple here on charcoal grill and its awesome. Don't know if our cedar same as western and what kind of flavor that would give.
What about a wood fire?
I was talking to my brother-in-law about this the other day and I came up with a good idea. I'm going to design a hybrid grill. I'm going to pipe gas into the grill, but only as a quick way to start the charcoal. This should allow me to still be lazy, yet get the flavor that I like.

There's actually a much easier way...Open the lid, turn the burner knobs and hit the light button!
