Definitely it has to be Mexican.

Though a big fan of food (heck, I even travel by gastronavigation "Go down and turn left at the Burger King, go a mile and turn right at the Dairy Queen") I must say that goooood Chinese is near and dear to the belly.  I served for two years in Hong Kong as an LDS Missionary.  I have a fair hand at cooking Cantonese.  Dim Sum... well... that's just a religious experience!

I love it all. Vietnamese, Japanese (sushi), authentic Mexican. I don't have Indian food often but when I do I love it and keep eating until its all gone. I think I know what's for dinner tonight.

I lived with a girl for 4 years who was half Vietnamese/Chinese (mother) and her father looked like Richard Gere. Anyway... Her mother would make the most outstanding Vietnamese food I've ever tasted. She would make a soup that took 24 hours to make. When served, raw beef was sliced almost translucent thin and put on top of noodles, herbs, etc... Then she'd pour this boiling hot anise like broth over top which cooked the meat as it sat there. Add red pepper paste, fish sauce (she called it "nook num"), lemon... It's been years but it's still one of the top 3 food experiences of my life. I wish I could find that in a restaurant somewhere.

Here's the recipe.

It's really a spinach pie/lasagne with phyllo dough taking the place of the pasta. Takes only 15 minutes to make. Well worth the effort. I've been eating this stuff ever since I was a kid. It was my mother's way of getting me to eat my spinach.

I voted for Mexican, but really it would be NEW Mexican. Our food here has a flavor all it's own. I'm a green chile addict. I eat it on anything I can. It's a food group all by itself. Italian is great too, we have a good family friend who is 100% Italian and she can COOK!
